Pretty sure the DD does 3 mill damage before skills, and you get DD V on SiSi, which gives an extra 5 or 10% damage per level. Something like that, which is why your carrier went 'pop'.

Use turrets or launchers, not both. This allows you to have two gyro's/BCUs, instead of one of each. Also, why are you using launchers on a Loki.... As for the cap stability. Right click on the cap booster in EFT, and change the charge to faction...
